I hope you enjoy this delicious burrito bowl! It was created by Maya Bradstreet, the owner of A Recipe for Wellness. I love the addition of the mango and avocado. It really takes the dish to a new level! It has protein, healthy fat, and carbohydrates that are rich in fiber making it a well-rounded meal!


½ cup cooked short grain brown rice or quinoa

½ cup cooked black beans

1 pepper, chopped

1 scallion, chopped

Handful or cilantro, chopped (optional)

1 tsp Tabasco or hot sauce

Juice from ½ a lime

½ avocado, cubed

Garlic powder, sea salt, and cumin, to taste

½ mango, cubed (optional)



1. Combine all of the ingredients except the brown rice/quinoa and avocado. Let this mixture marinate anywhere from one hour to overnight.

2. Ladle the black bean mixture over the rice/quinoa.

3. Enjoy!
