Super Bowl Sunday is only days away! It is typically a time of overeating, drinking, and cheering. Whether you are watching for the commercials or you are in it for the football, there is no avoiding the food at whatever party you attend. Instead of making the typical bagel bite, I came up with a healthier alternative, Eggplant Pizza.
When picking out an eggplant, you want to choose one that is firm, smooth, shiny, and is a dark purple color.
Ingredients
1 eggplant, sliced to ½ inch thickness
~1 cup of spaghetti sauce
~ 1 cup roasted peppers
~1 cup sautéed mushrooms
2-3 chicken breasts, cooked and torn/shredded into bite size pieces
~8 ounces of goat cheese
Salt, to taste
Pepper, to taste
Basil, to taste (optional)
Directions
Preheat oven to 500°F.
Line two baking sheets with aluminum foil and spray with olive oil.
Place eggplant slices on the baking sheeting.
Brush each side of the eggplant slices with olive oil.
Salt and pepper both sides of the eggplant.
Bake for 15 minutes.
Remove from oven and flip eggplant slices.
Put 1-2 spoonfuls of spaghetti sauce on top of each slice of eggplant and spread evenly.
Put roasted peppers, mushrooms, chicken, and any other veggies of choice on the eggplant slices.
Top with a LITTLE goat cheese and basil (if desired).
Place back in the oven for 10 minutes.

You can get pretty creative with this recipe and add any veggies you would like. You can also use blue cheese instead of goat cheese. One eggplant will make about 8 pizzas.
In addition to having healthy, tasty food at the Super Bowl party you attend, there are a few other things you can do to prevent it from sabotaging you: be sure to drink a glass of water for each alcoholic beverage you consume, sit away from the food, pick one to two of your favorite foods to indulge in, and stop eating when you are satisfied. Enjoy the game and hopefully some eggplant pizza!
