Thanks Teresa for providing us with this wonderful recipe! Enjoy these three delicious varieties of hummus: roasted garlic, roasted red pepper, and avocado! You can layer them to make a parfait or appreciate them separately.
1 can Garbanzo Beans (drain, but reserve liquid)
2 cloves roasted garlic, diced (stuff from jar is fine)
Juice of 1 lemon
1 tbsp olive oil
1 tbsp cumin
1 tsp cayenne pepper
Salt to taste
Ingredients for Varieties
Roasted Garlic: nothing extra is needed (base for other varieties)
Roasted Red Pepper: 1 roasted red pepper, substitute lemon for lime juice
Avocado: 1 ripe avocado or 1/2 cup guacamole
Puree all ingredients and add reserved liquid from beans to desired consistency. For the Roasted Red Pepper Hummus, puree 1 pepper first then add other ingredients. For Avocado Hummus, use 1 ripe avocado or ½ cup guacamole and swap the fresh lemon juice for lime juice.
Serve layered with fresh vegetables.
