Try this quick recipe created by CFR’s newest staff member, Teresa. Not only is it delicious, but it is also healthy!


Serves: 3


2-5 oz cans solid white albacore tuna in water, drained

1/4 cup red onion, chopped

1 jar roasted red pepper, chopped

2 Tbsp pepperoncini, stems removed and chopped

Juice of 1 lemon

2 Tbsp Greek vinaigrette dressing

Pinch of salt and black pepper.



1. Combine the tuna, red onion, red peppers, pepperoncini, and vinaigrette in a mixing bowl.

2. Squeeze lemon juice onto mixture and mix well.

3. Salt and pepper the tuna salad to taste.

4. Serve with cucumbers or on a bed of spring mix lettuce. It also makes a great filling for wraps!
