Ingredients
Few handfuls red leaf lettuce and/or spinach
1/8 cup roasted peppers, chopped
¼ yellow pepper, chopped
1/8 cup sundried tomatoes, chopped
1/8-¼ avocado, sliced
2/3 tablespoon of goat cheese, crumbled
4oz grilled or baked chicken, cut into strips
1-2 tablespoons balsamic vinaigrette
Directions
Place all ingredients in a bowl, mix and enjoy.
Feel free to vary the ingredients and/or amounts. However, I would stick the recommendation for the goat cheese and avocado. When I make this I never measure; I usually just add what looks like a good amount.
